A key descriptor is "holistic." I'm sure that Susan and Elmer have examples of this from their classes. There have also been university-wide efforts to take a holistic approach to students, though I'm not sure where this is best documented. If Keri Haas were still here, I'd ask her.
Another key descriptor is "practical." Here are several artifacts from my OT Intro class (BI511): Two, Three, Four (there is no One). They're assignments that involve using scholarly resources but then implementing them all in very practical scenarios. If you need more examples of assignments like this, let me know. I use them in most of my classes.
